This hearty, protein packed, vegetarian meal is going to be a healthy recipe hit in your home. Plus it is SO EASY. 2024 is the year that I ditch the idea that making dinner for my family is a chore (but hey, we all have those nights) and instead letting it be what it is. A chaotic point in the day where I get to create something yummy for my family. I am focusing on fresh ingredients this year and I love this vegetarian dish that your whole family will love (even my 2 year old ate a deconstructed version). These simmered tomatoes and cannellini beans over jasmine rice have the flavors of an Italian pasta with very few ingredients.
A family friendly healthy recipe that works for all of my kids is sometimes hard to come by. I am a big fan of recreating our restaurant favorites at home using fresher, healthier ingredients. My hope is that my site is a resource for all those running a household who just want a little encouragement in the kitchen!
Simmered Tomatoes and Cannellini Beans Over Rice Recipe
Ingredients:
1 pack of cherry tomatoes, sliced in half
1 can of cannellini beans (and the liquid!)
1/2 shallot, sliced
3 cloves of garlic, chopped
a good olive oil
1/2 cup low sodium vegetable stock
1 cup jasmine rice
salt and pepper
fresh burrata (or any soft cheese of your choice)
fresh basil
toasted pine nuts (optional)
Start by cooking your jasmine rice according to the directions on the box/bag. Mine usually takes 15-20 minutes and will be done at the perfect time. You can also toast some pine nuts on medium heat in a small sauce pan. Just watch closely because they burn quickly!
Over medium heat, coat your pan in olive oil and saute your shallots and garlic until fragrant (not browned!). Add your sliced tomatoes and let them continue to cook and get soft. Once soft, use an emersion blender or the back of a wooden spoon to smash them up. Add your vegetable stock and bring the tomatoes to a boil. Lower the heat and add your cannellini beans. Mix them into your tomatoes and let this simmer and thicken a bit (usually 5-10 mins). Season with generous salt (usually 3 big pinches) and a pinch of pepper.
To serve, place jasmine rice in a bowl and spoon over your beans and tomatoes. Top with fresh basil, burrata and pine nuts. ENJOY!!
*also note, you can really use any cheese you want but a soft cheese makes this really savory and delicious. Next time I’m going to try ricotta or a scoop of cottage cheese for extra protein.
