Taco Bowl Casserole Recipe

This easy weeknight family dinner is everything you want in a meal – quick, easy, efficient and SO DELICIOUS. I must have stumbled upon this recipe on Pinterest years ago and have been making it ever since. I sometimes call this the “clear the pantry casserole” because I’ve been known to throw so much random stuff in here (like canned black olives, yum) and it always just works! But if you love Mexican flavors (who doesn’t!) and a one dish meal – this is for you. Taco Bowl Casserole! It reminds me of a Chipotle bowl but warm and delicious.

My mom used to make chicken and rice casseroles all the time and I learned that the foundation of any good casserole is rice and chicken stock. I have another great recipe using Lipton’s onion soup mix and it’s sort of like an old school chicken and rice casserole that your grandmother would make. I’ll have to give that a go next time!

Taco Bowl Casserole Recipe

Ingredients:
1 cup of uncooked white rice/jasmine rice
1 cup of chicken stock (I use low sodium)
1 tbsp chili powder
1 tbsp cumin
1 tsp garlic powder
1 can of black beans, rinsed and drained
1 can of corn, rinsed and drained
1 can of green chilis
1-1.5 cups shredded rotisserie chicken
1/2 cup of pico de gallo
1-2 cups of shredded cheddar cheese (the more the merrier!)
optional: anything you would normally top a taco with! sour cream, cilantro, hot sauce, jalapeños.

Preheat oven to 350F. In a casserole dish, add 1 cup of rice and 1 cup of chicken stock to the bottom. Add your spices and mix all together. Add your shredded chicken (you sort of want to seal the rice at the bottom), beans, corn and chilis (I usually don’t use the entire can of each of these) and pico de gallo – I’ll even pour some of the juice from the container in there too! Top with shredded cheese and cover with tin foil. Bake for 45 minutes, remove tin foil and top with a little more cheese. Bake for an additional 8-10 mins until cheese is bubbly. Serve in a bowl with your favorite toppings and enjoy!

My kids looooove this recipe, I just top their’s with sour cream and a sprinkle of cheddar cheese. It’s a hit for the entire family and I love a good casserole dish!
