
Summer means constantly having hungry kiddos at home! I find myself running through snacks on a daily basis so I like to have some healthy options in my back pocket. We are big fans of energy bites in this house and I’m a big fan of extra protein and fiber for my kids. I love that there are literally so many ways you can make these and this is just one recipe (of many) that we love. These peanut butter and jelly energy bites are sure to be a favorite in your home, too.
Peanut Butter and Jelly Energy Bites
Ingredients:
2 cups rolled oats
3/4 cup peanut butter (can sub for sunflower butter if you have an allergy)
1 scoop vanilla protein powder
1/2 cup shredded unsweetened coconut
1/4 cup raspberries
1 tbsp chia seeds
1 tsp honey (and more if your balls need a little extra stick!)
Start by adding your raspberries to a bowl and mash them up with a fork. Then add your chia seeds and blend them into the raspberries. Add some honey and let this sit (10 mins) so the chia seeds expand and get soft. In a large bowl combine your oats, peanut butter, coconut, protein powder and raspberries. Use a spatula to make sure everything is evenly incorporated! If your mixture feels dry you can add a little more honey or maple syrup works, too. Wet your hands (I find this helps mold the balls) and using a tablespoon make your balls. Store in the freezer and enjoy!!
*I like to keep these in the freezer so they stay nice and intact. If you’d rather freeze them for an hour and then move to the refrigerator!
