Easy Zucchini Taco Boats

My philosophy when it comes to cooking is healthier versions of the meals I want at a restaurant. If I ever do a cookbook that’s what it will be – classic, indulgent favorites with a healthy twist. I’m putting it out into the world! This recipe is EASY. I am a busy mom who loves the satisfaction of cooking but hates the mess and the stress of cooking something new. I look for reliable meals that my whole family will eat and this recipe is just that. Quick, packed with protein, delicious and healthy!

Easy Zucchini Taco Boats

Ingredients:
4 zucchini, trimmed if needed and cut length wise
1 lb ground beef (you can also use ground turkey or chicken)
1 can mild green chilies
1 can of cannellini beans, drained and rinsed
1 jar (or half cup) of your favorite salsa
1/2 cup of enchilada sauce
shredded cheese to top

Preheat your over to 350F. Trim up your zucchini, pat dry and season and salt and pepper. Bake for 10 minutes (this is to soften and bake off a bit). While these cook, in a saucepan, brown your meat and season with salt. Then add a can of green chilies (juices and all!), drained cannellini beans, 1/2 cup of your favorite salsa and 1/2 cup of enchilada sauce. Combine and let this simmer for a bit to burn off some of the liquid and really get flavorful.

While this simmers away, take your zucchini out of the oven and using a spoon dig out all of the insides. You can see my REEL with step by step instructions HERE. This creates the boat! Then place in a casserole dish. Fill each boat with your taco mixture and top with cheese. Bake covered in tin foil for 10 minutes (still at 350F because everything is already cooked!) and then remove the tin foil and bake for 5 more minutes until cheese if boiling. You can pop the broiler on if needed!

Serve up with some cottage cheese (or sour cream!) and whatever else you like! ENJOY!!
