These crockpot chicken gyros are so loved that they deserved a permanent home on Hello Adams Family! This recipe comes from my friend Jenna. It was a meal she made for a girls dinner when we were fresh out of college and none of us really knew how to cook. She sent the recipe out to all of us after and it is a hit amongst all of my friends. For awhile it felt like the only thing we ever served because it was the only thing we knew how to cook, haha. I promise you this recipe will be a favorite for everyone in your family and it makes for delicious leftovers too! Healthy, simple, easy to prep in the morning and come home to dinner ready to eat. Gotta love that! Double the recipe because one meal of this is not enough.
Crockpot Chicken Gyros Recipe
Ingredients: (serves 3-4, I recommend doubling for leftovers!)
- 1 lb boneless, skinless chicken breast
- 2 tbsp extra virgin olive oil
- 2-3 garlic cloves
- 1 tbsp oregano
- 2 tsp salt
- 1 tsp pepper
- 1/2 cup water
- 1/4 cup lemon juice
- 3 tbsp red wine vinegar
Mix all of these ingredients in your crockpot! Cook on low for 6-8 hours or high for 3.5-4 hours. Shred chicken in the crockpot using two forks (this is what I do!) and let them sit in the juice for another 30 minutes on WARM. Serve however you’d like! We usually serve as an open plate with whole wheat pita, diced tomatoes, cucumber, mixed greens and tzatziki sauce. Top with feta and enjoy!
