I am a self proclaimed rice krispie treat fanatic. I LOVE RICE KRISPIE TREATS. They are sweet, buttery, gooey, crispy – I mean honestly what is not to love? I am all about elevating every day treats for holiday (remember this popcorn recipe from two years ago?) because they kids think it is the coolest and these are relatively easy and fun.
When I made these the other day, I described the rice krispie treats that were sold at my high school cafeteria which set the bar high for any rice krispie treat I would ever make. They were perfection. The most dreamy ratio of crisp and gooey with big chunks of marshmallow throughout. I still drool thinking about them! They were enormous and so delicious.
I bought these sprinkles at our local Publix but I found some fun Halloween sprinkles on Amazon here and here!
Holiday Rice Krispie Treat Recipe
4ish cups of Rice Krispie cereal
1 bag of mini marshmallows
1 bag of regular size marshmallows
1 stick of butter (maybe a little more 😉
1/4 teaspoon salt
1/8 teaspoon vanilla extract (optional)
sprinkles + candy of your choice!
In a large stock pot, melt the stick of butter over medium heat. Once about half way melted, add the entire bag of regular marshmallows and begin to melt until combined. Stir pretty consistently so they don’t burn. Add the salt to butter + marshmallow melt.
Add 3 cups of rice krispie cereal to the mixture and stir to combine. At this point it’s up to you and your preference as to your ratio of crispy to gooey (the most important part of a good rice krispie treat!!). I usually add one more cup and then a couple handfuls of the mini marshmallows. Start to combine! The trick is you want the mini marshmallows to get a little melty but maintain their shape, that way you get bites of soft marshmallows mixed in with your rice krispie! Add some of your sprinkles but don’t mix too heavily otherwise they will melt through.
Butter a 9×13 casserole dish and dish the rice krispie mixture into the dish. Top with remaining sprinkles, candy (like candy corn!), marshmallows and whatever else excites you. Let cool completely and enjoy!
