I don’t know about all of you, but I need a little variation in my weekly routine, especially when it comes to lunches. It’s hard to get excited about heating up the same leftovers four days in a row or eating yet another sad desk salad (you know the one). But I’ve also really been making an effort this year to avoid wasting food or spending money on something I could have made myself at home. Browsing Pinterest for healthy recipes is one of my favorite steps in my Sunday routine, and I’ll spend an extra few minutes picking out 1-2 simple but healthy lunch recipes to try that week. Here are a few of my favorites!

Crunchy Thai Peanut and Quinoa Salad (pictured above): Crisp, colorful, and super satisfying, thanks to quite a bit of plant-based protein. 

Kale, Quinoa, and White Bean Soup: I’ll make a big batch of this on Sunday and heat it up throughout the week! Sooo good with some crusty bread on a cold day.

Rosemary, Chicken, and Avocado Salad: So many amazing flavors in one salad, and the vinaigrette could not be easier to whip together.

Avocado Breakfast Burrito: Because eggs are more than acceptable as a lunch item, especially in burrito form.

Roasted Brussels Sprout and Couscous Salad: Hearty and warming—this salad would be great with any leftover roasted veggies!
