You know when you see someone with a delicious recipe that feels intimidating? You keep it in your mind but sort of forget about it because you don’t feel brave enough to attempt said recipe and that entire category of recipe just stays locked away forever because you don’t believe you can attempt it? Well, I am here to tell you that you CAN MAKE THOSE RECIPES THAT FEEL INTIMIDATING and you may be surprised by how easy they actually are. Bowls with any sort of fish have always intimidated me! I think it started with the poke bowl because I never knew what kind of tuna to ask for at the fish store and it felt fancy and unattainable. And when I first stumbled upon a recipe that inspired me to make this salmon bowl I initially put it in my “cannot make but wish I could!” recipe pile until I decided to go for it. And let me tell you, this recipe is SO EASY and special.
Roasted Salmon Bowls
Ingredients: makes 2 servings
2 8oz salmon filets, skin removed and cut into cubes
1/4 cup sesame oil
1/4 cup coconut aminos
2 tbsp sriracha
2 tsp sesame seeds
1 cup jasmine rice
1 cup chopped cucumbers
1 cup edamame
1/2 cup cherry tomatoes, halved
1/3 cup green onions, sliced
1/2 cup peppers, chopped
1/2 cup mayonnaise
*ok note that you can use whatever toppings you want! Shredded carrots, cilantro, peanuts, cabbage – the bowl is your oyster! I’m just giving you a foundation.
Cook your rice according to the package! While it’s cooking, remove the skin from your salmon and cut into cubes. In a bowl combine your sesame oil, coconut aminos and 1 tbsp sriracha. Put your cubed salmon into the bowl, top with 1 tsp of sesame seeds and mix all of that together. Let your salmon marinate for a few minutes (can also prep this before and let marinate in the refrigerator!). Cook your salmon in an air fryer – 375F for 12 minutes. OR you can bake on parchment paper at 375% for 12 minutes.
In a separate bowl mix together your mayonnaise and 1 tbsp sriracha. You can also brown 1 tsp sesame seeds in a pan but watch closely because they burn quickly!
Plate your rice and add your toppings. Top with the roasted salmon and some spicy mayo! Enjoy!
