Roasted Vegetables and Goat Cheese Farfalle

Oh boy you’re going to love this pasta recipe! It’s decadent, full of flavor, warm and all the cozy pasta feelings in one easy dish. Again, like every recipe I make, you can literally make this your own in so many ways. Add other veggies, omit the seasonings you don’t like, add whatever you want! But the goat cheese and the tomatoes make this incredible sauce that is just packed with so much flavor. Don’t skip out on the lemon zest because it provides the most incredible zing when paired with the goat cheese. I love to have this in my back pocket on the nights I’m hosting friends for dinner. A great family meal (Charlie, my 8 year old, LOVES THIS ONE!).

*Just to note with the recipe, depending on the size of your casserole dish, you can add more vegetables or less. Just eyeball it! It won’t affect the flavor! For example, my dish was smaller than I usually use so I didn’t add as many tomatoes/zucchini.

Roasted Vegetables and Goat Cheese Farfalle

Ingredients:
1 packed cherry tomatoes, halved
1 zucchini, sliced
1/2 shallot, chopped
2 garlic cloves, chopped
1 lb farfalle, cooked according to packaging
1 4oz roll of goat cheese
extra virgin olive oil
zest of 1 lemon
chopped basil (as much as you want!)
red pepper flakes
salt + pepper
*1/4 cup reserved pasta water before straining*

Preheat your oven to 375F. In a casserole dish, coat the bottom with 2 tbsp of extra virgin olive oil and add your tomatoes, zucchini, shallot, garlic and season with salt and pepper. Mix to coat and bake for 30 minutes. While this is cooking, zest your lemon, chop your basil and slice your goat cheese – set aside.

Cook your pasta according to the box. I prefer farfalle because it really holds onto the sauce but use whatever you prefer! Penne is also great.

Remove your veggies from the oven and strain your pasta but RESERVE 1/4 of the pasta water before you strain. Add your pasta straight to the veggies and top with the goat cheese and reserved pasta water. Stir to combine and let the goat cheese get all melty with the tomatoes. Add the lemon zest, basil, pinch of red pepper flakes, a couple pinches of salt and pepper and combine again.

Serve with a little grated parmesan on top! ENJOY!! Gosh this is so yummy.
