Buckle up for these peppermint fudge date bites because they are SO GOOD. I love coming up with recipes that include the flavors of the holidays and these are a fun take on your normal Christmas cookie. The texture is gooey and rich but with just 4 ingredients they come together super quickly! I feel like good things take a little elbow grease sometimes so be prepared to get your hands a little dirty (with chocolate #worthit). Let me know what you think!

I think Nutella is the best option for this recipe because it has a thicker consistency and makes it easy to “stuff” your dates. You could probably use melted chocolate but you’d have to thicken it a bit. I think they make some nut allergy safe nutella? Maybe? Otherwise you could use sunflower butter mixed with some cocoa powder and the should give you the same sort of effect.

Peppermint Fudge Date Bites

Ingredients:

3/4 cup of nutella
peppermint extract
6 crushed candy canes
pitted dates
*a ziplock bag for dividing (optional)

The nice thing about this recipe is that you can literally make as many as you want. I crushed my candy canes and mixed them with 1/2 cup of nutella (reserve a little bit of candy cane to top your dates at the end!) and a couple drops of peppermint extract. Be aware that the peppermint extract can be really strong so start with less and know you can always add on. I loaded my mixture into a ziplock bag and cut off the tip to pipe my dates but you can also just use a knife (my dates were really small here so needed a smaller applicator). Stuff your dates! I like to buy mine already pitted. Sometimes that have a slice down the side and sometimes they have a hole at the top where the pit was removed. I find it is easier to “fill” your dates with the slice down the side. Place on a tray lined in parchment paper. Melt the additional 1/4 cup of nutella with another couple drops of peppermint extract in the microwave for 1 minute. Use a fork and layer it over the dates. Top with the remaining crushed candy cane and freeze for 30 minutes. I like to then store in the refrigerator so they aren’t completely frozen when I go to eat one. ENJOY!
