Protein Banana Muffins

A delicious recipe for these protein packed, gluten free, banana muffins. Oh boy guys, these are going be on repeat in your home! I have already gone through two batches and the kids LOVE THEM. I find great joy in making food for my kids that will fill them up and these are the perfect way to start their day (or yours). I just had two post workout and they are delish! I was originally influenced by this recipe but tweaked a little bit.

Protein Packed Banana Muffins

Ingredients: makes 12 muffins
3 bananas
3 eggs
1 tbsp maple syrup
1 tbsp Daysie vanilla syrup
2 scoops vanilla protein (I use this one)
1 3/4 cup almond flour
1/2 tsp cinnamon
1 tsp baking soda
1/2 tsp baking powder
1/3 cup nut butter of your choice (softer works best! we used peanut butter)

Preheat oven to 350F. Grab a muffin tin and some cute liners (or you can butter your muffin tin) and set aside. In a large bowl, mash your bananas, I usually like to keep a few clumps here and there. Add your eggs and wet ingredients and combine. Add your dry ingredients and combine. Don’t overmix! That is how you’re going to maintain that airy muffin texture. I have and love this mixer for baked goods.

Bake for 15-17 minutes. Let cool and enjoy!
