One of my weekly struggles when it comes to meals is wanting to try new recipes but also trying to stick to the basics. It’s amazing how expensive a new recipe can be after buying all of the ingredients and sometimes my favorite evenings are when I stick to a good protein and veggie combination. But that can also get boring and I was trying to come up with ways to dress up your basic chicken breast. When it comes to making meals “my own” (I am in no way a recipe maker), I like to think about the flavors I gravitate to and how I can bring them into the meals I already enjoy. Greek, Italian, Mexican, American – there are so many possibilities when it comes to this recipe but I thought I’d share our favorite combination of this fancy chicken.
Here are some of our favorite combinations:
DRESSED UP CHICKEN BREAST
Pesto, goat cheese, sun-dried tomatoes.
Green chilies, cheddar cheese, sour cream, taco seasoning.
Olive tapenade, feta cheese, sun-dried tomatoes.
Tomato sauce, sliced mozzarella cheese, italian seasoning (lightened up chicken parm!)
Honestly, the options are endless. But sometimes you need to pump a little life into your chicken breast and this is just the punch it needs.
Here is what you’ll do:
Preheat oven to 400F. Cut your chicken breast in half without cutting all the way through so you can butterfly it open. Pack it with the good stuff and then fold back into place and put it on a parchment lined baking sheet. Bake for 22 minutes. Slice and enjoy! I like to serve with a really light salad – usually an arugula, parmesan, lemon combo. So yummy!
This is honestly a great dinner when you’re hosting because you can prep before, doesn’t require much time in the kitchen and looks fancy. Simple hacks to dress up the most basic of dinners!
