Truth be told, I haven’t used our kitchen much. We are still sort of on that “surviving, not thriving” train and I miss cooking. Going through our recipe archives reminded me how much I love veggies! and herbs! and spring colors! So I am making a point this week to cook something new and yummy every single night. Some are going to be new recipes and some are going to be versions of our favorites but I need to get out of my rut! I’m inspired by the freshness of this season, the smell of the grill going in the backyard, enjoying a cold glass of wine while I chop veggies in the kitchen. It inspires me so much! We just planted a few of our own vegetable plants in the backyard and I can’t wait to use them.

So until I get my act together to create some yummy newness for you, let’s revisit 5 easy meals that you have to put in your weekly rotation! Add a little grilled chicken or salmon or shrimp for some protein on these salads or simply enjoy their pretty green deliciousness.
