Trust me when I say that this is the best summer salad recipe ever. It goes with everything, it is light and delicious and is so easy to throw together! It will be a hit when you’re hosting and a hit paired with your favorite family recipe. Even Charlie picks at this salad whenever I make it! It is SO SO GOOD. Please make it.
My favorite thing about this salad is it is very few ingredients but so much flavor. Here is what you’ll need:
Peach and Burrata Summer Salad Recipe
Ingredients for salad:
Arugula
1 peach, sliced
Handful of slivered almonds
1 ball of burrata, ripped into pieces
Cracked black papper
Ingredients for dressing:
1 tbsp dijon mustard
1 tbsp honey
1-2 tbsp olive oil (start with 1 tbsp and add more if needed)
1 tbsp apple cider vinegar
salt and pepper
*measurements aren’t perfect, I usually start small and taste to see what I need more of. If the mustard is too bitter, add a little more honey, add more olive oil if you need a thicker consistency or it tastes too much like vinegar. Play around with it!
Put all of the ingredients together, blend dressing together (I usually mix in a mason jar) and dress the salad! Toss and serve.
