Spring Jalapeño Herb Sauce

Most nights our dinners are boring. I wish I could say that I whip up these elaborate meals for my family but we usually stick with protein and veggies and sometimes rice/starch. I’m a huge fan of a good herby sauce to zhush up a meal. There are so many combinations that are delish but I recently stumbled upon a FAVE. I think I made this recipe 3x in one week to have with our meat, our eggs, french fries, fish, shrimp, mixed with hummus for veggies and I bet it would even be good with pasta!

If you don’t have a good food processor, I highly recommend investing. It is one of my most used items in my kitchen! When it comes to these recipes it’s hard to give you specific ingredient amounts. I recommend tasting as you go and adding additional seasoning as needed! Here is the basis:

Spring Jalapeño Herby Sauce Recipe

Ingredients:

1 bunch of cilantro
1 jalapeño roughly chopped
1/4 white onion roughly chopped
2 garlic cloves
zest of one lemon
juice of one lemon
2 tbsp extra virgin olive oil
salt + pepper
red pepper flakes

In the food processor, blend everything together! Start with 2 tbsp of extra virgin olive oil and continue to add more based on the consistency you prefer! I lean towards a pesto consistency. If you feel like it gets too liquidy, add the stems of the cilantro to thicken! You can also add more salt if it tastes to lemon-y for your liking and red pepper flakes based on your heat preference.

Serve with grilled chicken, breaded chicken, steak, shrimp, salmon, roasted potatoes or starchy veggies, scrambled eggs – the list goes on. Trust me we will be making this all summer!
