Liz Adams shares easy holiday baking recipes to make with family and friends. Easy and delicious chocolate and peanut nut clusters for the holidays. If you’re looking for a last minute gift idea for teachers, neighbors, service men/women (your housekeeper, mailman, UPS driver, garbage man, etc.) or are looking for a quick hostess gift or even stocking stuffer – this recipe is for you! These nut clusters serve as complete nostalgia for me. I remember my mom spending an entire day making batch after batch of these nut clusters and opening our refrigerator to see them cooling (and always stealing a few) before the holidays.

Chocolate Peanut Butter Nut Clusters
(makes about 3 dozen)

What You’ll Need:

cupcake liners
cookie sheet
1lb bag of dry roasted, unsalted peanuts
2 1b bags semi sweet chocolate chips
1 cup creamy peanut butter

In a double boiler (examples here) melt 2 bags of semi sweet chocolate chips, stirring constantly to avoid burning. Add in peanut butter, melt and stir to combine. Add in peanuts and combine. Meanwhile, line a baking sheet with cupcakes liners and fill each liner with one spoonful of chocolate/peanut mixture. Allow at least 30 minutes to set in the refrigerator but the longer they set the better! Remove and enjoy!

*We store ours in the refrigerator because we like to enjoy them cold (and avoid any melting).
