Our family loves a good veggie tray and I have the best recipe for a homemade, high protein, cottage cheese ranch dip that is going to knock your socks off. Veggie trays remind me of summers at my lake house. We always have a ranch dip on hang to help encourage the kids to eat their veggies in-between all the snacks. It is truly the most perfect appetizer for easy entertaining and always a crowd pleaser.
I combine cottage cheese with some fresh dill, lemon juice and olive oil plus a store bought packet of ranch to make this dip better than any dressing. Plus, I feel better knowing it is high in protein and filling for busy days! Please let me know if you make it!
Cottage Cheese Ranch Dip
Ingredients:
1 16oz container of cottage cheese (I love Good Culture)
1 packet of ranch seasoning (I used an organic mix from the store, also love TJ’s ranch seasoning or Hidden Vally)
4-6 sprigs of fresh dill
1 lemon, zested and juiced
t tbsp extra virgin olive oil
salt + pepper
In a food processor, add your cottage cheese, 1/2 packet of ranch seasoning (or about 1 tbsp), the zest of 1/2 lemon, 1 tbsp olive oil and combine. Your dip will still be a little thick so then add the juice of your lemon plus a little more ranch and dill. Mix again! If it is still too thick you can add more olive oil. I would taste and then add salt and pepper if you feel like it needs it! If it tastes too tangy, add a little salt. I like to add a lot of dill so just taste as you go. Enjoy with your favorite veggies!
