My mouth is watering just looking at these photos. This is the kind of pasta dish that you could happily have every day for forever. It is light, fresh, flavorful but so simple that you sort of can’t believe how delicious it is. My thought for this came because I’ve been on a big caprese salad kick lately. But, I don’t love balsamic vinegar with my caprese salads (I know!) because I feel like it disguises all the freshness of the 3 simple ingredients. I just love the flavor of the olive oil and salt and the juicy tomatoes and the basil to melt together and I thought to myself, why not add some linguini? And then I went a little farther and added some garlic and shallots and turkey sausage (because I knew Dave would want some protein) and the combination is really just chefs kiss. The perfect summer pasta recipe.
Summer Caprese Pasta Recipe
Ingredients: (serves 2-4)
1 lb linguine
2-3 turkey sausage linkes (I like to buy raw) with the casings removed
1 cup cherry tomatoes
1/2 cup fresh basil
1/2 shallot, thinly sliced
2 garlic cloves, minced
1/4 cup extra virgin olive oil
1 burrata ball
salt + pepper
Start by boiling your pasta water. Brown your sausage in a pan and set aside. Take 1/2 cup of your cherry tomatoes and slice in half and set aside and then sauté the other 1/2 cup in a pan with some olive oil. Once blistery and soft you can remove from heat. In the same pan add a little more olive oil and lightly sauté your garlic and shallots until they are soft. Combine all of these (the tomatoes, shallots, garlic) in bowl with 1/4 cup olive oil. Add 1/4 cup chopped basil and salt and pepper. Let this sit until your pasta is done cooking.
Once you strain your pasta, add it to the bowl of tomatoes, basil, garlic and shallots. Get all the pasta nicely coated in the olive oil (if you feel like you need more olive oil, add more!). Add your sausage. Season generously with salt and pepper. Plate your pasta and top with a big piece of burrata and more basil. Serve and enjoy!!
