Something about my recipes is that I am always inspired by what others are creating. Diane Morrisey (one of my favorite IG follows) posted a recipe for steak fajitas in the crockpot and then Pinch of Yum posted some yummy greek chicken bowls and I sort of combined them and added some additional flavors. The kicker here is the Garam Masala seasoning which is an Indian spice blend. It really stands up against the freshness of the greek inspired toppings making this dish, flavorful (it almost has a POP of flavors!) and so easy to come together!! Also, give me a crock pot meal all day, every day.
Crock Pot Chicken Fajita Bowls
Ingredients: (serves 2-3)
for the chicken:
1 lb of skinless, boneless chicken breasts
2 bell peppers of your choice, sliced
1/2 white onion, sliced
2 tsp of Garam Masala seasoning
2 tsp cumin
2 tsp smoked paprika
salt + pepper
extra virgin olive oil
1 cup of water
for the homemade tzatziki:
2 cups plain greek yogurt
zest of 1 lemon
juice of 1/2 lemon
1 small cucumber finely chopped
a few sprigs of dill, chopped
2 cloves of garlic, grated
salt + pepper
extra virgin olive oil drizzle
Pita optional!
With your Crock Pot on high, drizzle olive oil into the bottom and add your sliced peppers and onion. Lay chicken on top and add your seasonings. Pour in one cup of water and stir to combine. Let cook for 2 hours on high!
While it’s cooking, prep the toppings. You can either make a quick tzatziki like I detailed above (just combine everything in a bowl and mix!) or use store bought. Then we add some sides of feta, sliced cucumbers and olives.
After 2 hours, take chicken out of Crock Pot and slice. Put chicken back into Crock Pot and cook on low for another 30 mins or until you’re ready to eat! *you can also move to warm setting, your chicken should be cooked by now!*
Layer up everything in a bowl, add some pita on the side and enjoy!
I love this recipe because you can also make these fajitas with other seasonings like Mexican, true greek seasoning, italian and beyond. So delicious and EASY! This would also be yummy with steak and shrimp.
