Simple Greek Shrimp Salad

This recipe isn’t rocket science but if you take anything away from this salad let it be the dressing combination because I’m telling you, this dressing will go with everything! It is light, bright and TWO INGREDIENTS. I’ve been using on every salad I make – it is great along side steak, chicken and is my new favorite combo with caprese salad, too. It really enhances the flavors of your ingredients, rather than disguising them. Also, if you don’t salt and pepper your salads, you must start. *I did skip salt on this one because the feta is salty!

Simple Greek Shrimp Salad

Ingredients:

1lb raw shrimp, deveined and without shells
Finely chopped romaine lettuce
Diced cucumber
Feta cheese (sheep’s cow feta will change your life, use that if you can!)
Greek seasoning (this is what I use!)
Ground pepper
Tzatziki sauce (I love Trader Joes, optional but delish!)

Dressing:

Extra virgin olive oil
White balsamic vinegar

Saute the shrimp in a little bit of olive oil, once pink and just about done add your greek seasoning. Stir and set aside!

Cut up all of your salad ingredients and top with a drizzle of extra virgin olive oil and a drizzle of white wine vinegar. Eyeball this to get your desired dressing amount! I start with less and add a little bit more of whatever is needed (if it tastes to olive oily add a bit of vinegar, and vice versa!). Add fresh ground pepper! Top with shrimp and enjoy!
