Mexican Folded Quesadilla

I am almost embarrassed to tell you how much I make this folded quesadilla. Lunch, dinner, snack – it always works! I actually shared another version of this last year – folded buffalo chicken quesadillas. Really anything goes with these. You could make them greek flavored, italian, deli sandwich – the list goes on. But trust me, they are sooo good. Almost like a healthy version of a crispy Taco Bell crunch wrap (with a little less crunch).

Mexican Folded Quesadilla

Ingredients:
tortilla of your choice
shredded chicken (I used Trader’s Joes Mexican marinated chicken!)
shredded cheese
shredded iceburg lettuce
1/2 cup sour cream
1-2 tsp cumin
1-2 tsp chili powder

Start by making the sour cream – I use about 1/2 cup sour cream and then add the cumin and chili powder (this is really flavor preference!). Combine and set aside.

Lay out your tortilla and cut up from the bottom until you reach the center. Think of your tortilla in 4 quarters and place each ingredients in the quarters – chicken, sour cream, lettuce and cheese. Folder each quarter into the other and use the sour cream as a glue to keep each section together. Heat a light layer of avocado oil over medium heat and cook on both sides until crispy. Slice and serve with whatever you’d like!
