I love a festive holiday cocktail opportunity and this cranberry ginger margarita is one to enjoy now into Christmas. I made these last weekend for a girl’s night and they were a big hit. Light and refreshing and not too sweet at all. They do require a little bit of planning because you’re going to want to make your own ginger simple syrup but trust me it is worth it.

Cranberry Ginger Margarita
Ingredients:
for simple syrup:
1 cup granulated sugar
3/4 cup water
1 cup fresh ginger (skin removed + cut into 1″ pieces)
for the sugar rim:
1/2 cup salt
1/2 cup granulated sugar
zest of one lime
for the cocktail:
your favorite tequila
cranberry juice
ginger beer or club soda
fresh cranberries
To make the simple syrup: bring 3/4 cup water and 1 cup granulated sugar to a boil. Stir consistently for 5-10 minutes. Add your chopped ginger and bring back to a boil, mixing for another 5 minutes. Put the boiler on simmer, lid your saucepan and let simmer for 30-60 minutes. The longer you let it steep the stronger ginger flavor you’ll get!
To make the sugar rim: combine 1/2 cup salt, 1/2 cup sugar and the zest of one lime. Mix together!
To assemble your cocktail: Rim your glass, add ice and then 1-2 oz of tequila, 1 tsp of your ginger simple syrup, a splash of cranberry juice and top with ginger beer or club soda. Top with fresh cranberries as garnish. Sip and enjoy!
*my personal preference is to add not too much cranberry juice. It is a little bitter and a little goes a long way. I don’t want the cranberry juice to take over the flavor of the margarita. Play with your proportions because your preference may be different!
