I’m sharing 5 weekday lunch recipes that are easy and delicious! Starting with my go-to veggie sandwich which I easily make 3x a week. I love that with all of these you can play around with ingredients and flavors to really make it whatever you’re craving.
Veggie Sandwich
For my veggie sandwich, I use toasted Dave’s Killer Bread, I like the thin cut Good Seed. I top one side with a Laughing Cow Cheese wedge (spread on) and the other with a spicy, grainy mustard. On the cheese side I’ll add some Everything But the Bagel seasoning from TJ’s. Then top with your favorite veggies! I like pickles, red onion, red peppers, lettuce, avocado and tomato. I also change it up and use hummus, black olives, sprouts, pickles jalapeños – literally anything. Sometimes I add turkey, too!
Tuna Salad Lettuce Boats
I take a can of tuna salad in water (I usually buy at Trader Joe’s) and put in a bowl with chopped celery (the trick is to chop all of the ingredients pretty small!), pickles, white onion, mayo, dijon mustard, salt + pepper. Mash all together to get the consistency you’re looking for! Take a head of romaine lettuce and use the leaves as “boats” for your tuna salad. Top with hot sauce, I like Red Clay’s Verde Sauce (LIZ25 gets you a discount!). I usually eat this with some kettle chips, put them on top of your tuna salad for extra crunch.

Buffalo Chicken Wraps
Rotisserie chicken is my JAM. So many amazing recipes come out of a good old rotis chix that you can shred and use throughout the week. One of my favorites is simple buffalo chicken wraps! In a bowl, mix a cup of shredded chicken with your favorite buffalo sauce. I usually just use Cholula or we really like this one from Noble Made. To assemble your wraps, I use low carb wraps (I like this brand or Trader Joe’s sells a similar), Bolthouse Ranch and fresh spinach. Wrap them up and enjoy!
