
I honestly haven’t felt very inspired in the kitchen lately and when I need a good recipe to get me back into the game, I always lean towards mediterranean flavors. My inspiration in the kitchen comes from meals I’ve enjoyed, a version that I know my family will enjoy and ease! These ground turkey gyros were everything I wanted them to be, and more. I had seen this technique of cooking ground meat into a tortilla on Instagram a few times and decided to try it with this recipe. Wow! I’ll be using this method going forward for tacos on the flat top. We used (and love so much!) our MadeIn griddle and I just saw that it is on sale.
One thing that I think elevated mediterranean flavors when you’re cooking is adding lemon every step of the way. It adds a zippiness and freshness to each layer. If you’ve ever lived or visited Chicago, one of my favorite restaurants in Athenian Room in Lincoln Park. They are famous for their greek recipes and their gyros are a favorite. These tasted just like them and transported me back to my favorite years living downtown.

Ground Turkey Gyros with Homemade Tzatziki
Ingredients:
for the tzatziki…
1/2 cup plain greek yogurt
1 small cucumber, grated
2 cloves of garlic, grated
juice of 1/2 lemon
lemon zest of one lemon
1 tbsp chopped dill
1 tbsp extra virgin olive oil
flakey salt to taste
for the mediterranean slaw…
1/2 cup chopped cherry tomatoes
2 small cucumbers, chopped
1/2 cup green olives, chopped
1/4 cup pickled red onion, chopped
1 tbsp dill
1 tsp greek seasoning
1 tbsp extra virgin olive oil
flakey salt to taste
lemon zest from 1/2 lemon
for you the ground turkey…
1 lb ground turkey
1 tbsp extra virgin olive oil
1 tsp greek seasoning
a big pinch of flakey sea salt
+
really good feta on the block
avocado oil
tortillas of your choice! I used low carb flour tortillas
For the tzatziki, grate your cucumber in a bowl and use a paper towel to absorb majority of the juice. Grate your garlic, lemon zest and add your yogurt and dill. Add your olive oil and salt and mix until well combined. Refrigerate until ready to eat!
For the mediterranean slaw, combine all ingredients and refrigerate until ready to eat!
For the ground turkey, combine all ingredients in a bowl. Preheat your griddle and coat it with oil. I like to use avocado oil with turkey because it has a higher fat ratio and can handle high heat. Evenly distributed your ground meat evenly amongst your tortillas. Use a spatula or your hands to create a thin layer on the tortilla. Place tortillas meat side down on your griddle and cook for 4 minutes. The meat will cook fast because it is a thin layer! Flip and warm tortilla on the other side. Load of your gyros with all the toppings and enjoy!! Oh my gosh I’m drooling just typing this.
