My Lazy Stuffed Meatball Recipe

I love a good meatball. Honestly, nothing beats our turkey meatballs which are great to make ahead of time and freeze for the entire family. One of our most popular recipes on HAF! But when I have extra ground beef or ground turkey around and limited ingredients to jazz them up – I make this super quick and easy recipe! Perfect to put on spaghetti or sauté some veggies with your favorite red sauce. The secret ingredient…stuff them with cheese to pack an extra punch!

Lazy Stuffed Meatball Recipe

Ingredients:
1 lb ground beef (or ground turkey)
2 tbsp good pesto
1 egg
1/4 cup panko
1/4 cup grated parmesan cheese
1 tsp ground oregano
mini mozzarella balls
salt + pepper

Instructions:

Preheat oven to 375. In a bowl, combine ground beef, pesto, egg, panko, parmesan, oregano and a dash of salt and pepper. Roll into even balls and place on baking sheet but leave about 1/2 cup of mixture aside. Using your finger, poke a hole into meatball and stuff with mozzarella cheese. If needed, add a little more of the meat mixture to seal and put back on baking dish. Once all meatballs are stuffed, top with a little more salt. Bake in the oven for 25 minutes + serve hot!

These are the best because everyone in our family will eat them and all of these ingredients are usually stocked in our house on a random day. One of those meals that you forget about but are excited when you know you can whip them up quickly!
