On Saturday morning we set out to make some banana bread with a few overripe bananas that had been sitting on our kitchen counter. I asked our Amazon Echo Show – “Alexa, show me a recipe for banana bread” and this was the first recipe to pop up! It’s soooo good. So good that I go to bed thinking about having it with my coffee in the morning and then continue to sneak bites throughout the day. Moist, flavorful, light and seriously so good. The perfect thing to make it home with your kiddos! This recipe is from Simply Recipes.
The Best Banana Bread Recipe
Here’s what you’ll need:
- 2-3 very ripe bananas, peeled
- 1/3 cup melted butter
- 1 teaspoon baking soda
- pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups of all purpose flour
Preheat the over to 350°F and butter a 4×8 loaf pan, or whatever you have on hand! We used a 5×9 pan!
In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Store the melted butter into the mashed bananas.
Mix in the baking soda and salt. Stir in the sugar, beaten egg and vanilla extract. Mix in the flour. I find that the texture of banana bread is better when you don’t use a kitchen mixer and rather just a spatula. Gives you that homemade, imperfect bread!
Pour the batter into your loaf pan. Bake for 50 minutes to 1 hour or until a tester inserted into the center comes out clean. I checked ours at 45 minutes and it was still a little wet in the center. Took it out at 50 minutes and let completely cool in the pan (and cook a little more!) and it was perfect!
Let cool, remove from pan and continue to let cool completely before slicing! ENJOY!!
