I shared a sneak peek of this healthy peanut butter cup recipe on my snapchat last week and you guys went nuts! So many screenshots that I thought it was necessary to put this amazing recipe on the internets. These things are addicting, packed with protein and really good for you! I love having a couple with my coffee in the morning or sneaking one after dinner. Here’s what to do…
What you’ll need:
1 mini muffin tin
Ingredients:
for the bottom
1 scoop chocolate protein powder (my mom uses this protein and it is really fine/doesn’t leave the grainy texture that I sometimes get from protein powder – this stuff is good!)
3/4 cups organic peanut butter (I love Whole Foods’ peanut butter that is just peanuts and salt – no added sugar)
1 tablespoon grade B maple syrup (this maple syrup has less processing and more nutrients intact)
2 tablespoons coconut oil melted
Combine ingredients and distribute into a mini muffin tin evenly. Freeze for 15 minutes.
for the top
1/4 cup raw cacao powder
1 tablespoon grade B maple syrup
1/4 cup coconut oil, melted
Combine ingredients and add to the muffin tins (on top of the peanut butter layer). Let freeze for 30 minutes before enjoying. Store in the freezer!
*You obviously do not need to buy organic everything for this recipe but these are the items we use. Let me know if you have any questions in the comments.
