Easy homemade acai smoothie bowl recipe - Sequins & Stripes
I’ve been getting so many requests on my snapchat to share recipes with you and I’m going to try to be better in the new year. I wanted to quickly share my go-to recipe for an easy homemade acai bowl (that I made yesterday morning). I love using acai packs for smoothies because they have a strong berry flavor and it is easy to disguise really healthy things inside (when I really need an extra boost I add spinach, kale, etc!). You can find these acai packs in the freezer section of your grocery store (I buy ours at Whole Foods but I did see that Trader Joe’s just started making their own, too!). They are basically single serving packs and are great additions to smoothies. Here is my recipe for the perfect acai bowl…

What you’ll need (makes 2 servings):

1 frozen acai pack
1 1/2 cups coconut water
1 banana
1-2 scoops of almond butter
1 cup frozen blueberries

Hold the acai pack under warm water and break into pieces before taking out of the package and placing in blender. Add the coconut water, banana, almond butter and blueberries and blend until smooth. Put half of the blended mixture into a bowl and top with your favorite, healthy toppings! I used slivered almonds, strawberries, blueberries, banana, cacao nibs and cinnamon. You can also add chia seeds, goji berries, flax seed, kiwi (my favorite), granola, etc.

Easy, right? I am always so sad when it is gone, ha!
