Cranberry Orange Coffee Cake Recipe

I love this recipe because it is completely appropriate to make now through the Christmas holiday and is the perfect gift to give to family and friends. When the weather gets cold I usually make this every other Saturday to enjoy with our morning coffee throughout the week – it is so light and airy with the perfect amount of spice. I made a few tweaks but the original recipe is here.

What you’ll need:

1/4 cup {4 tbsp} melted butter, then 2 tbsp soft butter reserved {for topping}
1/3 cup + 1 tbsp sugar
1 egg
1/3 cup of milk
1 cup {or a little less} of flour
1/2 cup rolled oats
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
2/3 cup of cranberries
zest from one whole orange
1/4 cup of brown sugar {for topping}

Preheat oven to 350. In a bowl mix together the butter, sugar, egg and milk. Sift together the flour, baking powder, baking soda, cinnamon and salt and add it to the wet ingredients. Add the oats and stir until combined. Fold in the cranberries and orange zest. Spray an 8×4 pan with nonstick spray and pour the batter in making the top as flat as possible. Mix the softened butter and brown sugar together {it will be clumpy} and sprinkle all over the top. *You can add more if you prefer! Bake at 350 for 40-45 minutes, or until a toothpick comes out clean. Let cool completely before slicing!
