This Mediterranean Yogurt Dip appetizer recipe is DELICIOUS. Something magical happens when you add olive oil to greek yogurt. It is the richest, smoothest flavor and the perfect base to this lightened up appetizer. I made it last week to host some neighbors for dinner and I think it was gone in a few minutes. It is a burst of flavor in your mouth and easily comes together with just a couple of ingredients.
Healthy Mediterranean Yogurt Dip
Ingredients:
1 cup of plain greek yogurt
extra virgin olive oil
feta, olive and pepper salad/antipasto from Trader Joe’s OR combine the following:
kalamata olives
fresh feta, cubed
sweet mini peppers
extra virgin olive oil
mediterranean seasonings
*I would just eyeball the above ingredients until they are evenly combined and coated.
chopped parsley to top
endive (to serve)
crackers of your choice (to serve)
Smooth out yogurt in an even layer on a plate. Top with a drizzle of olive oil. Top with your feta, pepper and olive salad. Sprinkle with finely chopped parsley. Enjoy! It’s delicious and so light!
