A delicious salad recipe filled with vegetables to make you feel good this summer! You know when you see a recipe that is filled with all the vegetables you don’t love to buy…like the ones that you eat because you know they are good for you, not because you actually enjoy them? Those are the recipes I usually love to try because if someone can make broccoli and cauliflower taste delicious then I am all for it! I saw a version of this recipe made with just cauliflower on Instagram (it was a random account that I then never saw again) and tried to make a mental note of the ingredients. I love finding new ways to serve veggies next to a protein and this recipe is SO GOOD.
More of a tabouli than a salad because of the texture but delicious all the same. I have served with grilled shrimp for dinner and rotisserie chicken for lunch but honestly, options are endless. Would also be delicious with chickpeas for a vegetarian option! I made my go-to dijon mustard dressing to pour on top and every ingredient is light and healthy. Trust me you won’t notice you’re eating all these yummy veggies.
Broccoli Cauliflower Tabouli Recipe
Ingredients:
1 head of cauliflower
1 head of broccoli
1/2 cup cucumber
1/2 cup chopped parsley
1/4 cup roughly chopped pistachios
1/4 cup crumbled feta cheese
salt + pepper to taste
for the dressing:
1/2 cup extra virgin olive oil
1/4 cup dijon mustard
1-2 tbsp white balsamic vinegar
salt + pepper
Chop your cauliflower and broccoli in a food processor and use as the base of your salad. Cut up your cucumber, parsley, pistachios and feta cheese and add to salad. Mix together your dressing – honestly I sort of eyeball and taste as I go so if it feels a little too vinegar-y, add some more salt or olive oil. All portions can be played with if you like certain flavors more than others! Combine everything together and enjoy.
