We are trying to clean out our kitchen cabinets before our move so I’ve been coming up with random recipes to make throughout the week with what we have left! I’ve been really into rice bowls lately and this recipe was thrown together in about 20 minutes and both Dave and I were so sad when our bowls were cleaned. I love rice bowls because you can pretty much make them whatever you want. Get creative, add in random ingredients and play around with what you have in our refrigerator!
Crispy Rice Bowl Recipe
Here is what we used:
Ingredients: (2 servings)
Jasmine Rice (I used enough for 2 people based on packaging)
2 spicy Italian chicken sausages
1/2 Jalapeno, de-seeded and chopped
1/2 cup cherry tomatoes
1/2 bag of baby spinach
crumbed goat cheese
Prepare rice as directed on the packaging.
Cut up the chicken sausage and brown in pan. Add chopped peppers, jalapeño and cherry tomatoes until soft and fragrant. Add in cooked rice. Let all flavors blend together until rice starts to crisp in the pan. Mixing as needed so not to burn – probably 5-7 minutes. Add in spinach until starts to wilt.
Add to bowls and top with goat cheese! I didn’t add any seasoning (not even salt/pepper) because of the jalapeño and spicy italian chicken sausage really added a lot of flavor. Otherwise I would have added salt and pepper to taste, red chili flakes, etc.
