Happy Monday, friends! We have a busy week because we are going on a little family vacation on Thursday – yay! It isn’t often that we travel just the four of us (it usually feels like family is with us too) so it will be fun to make some new experiences together. That being said, the first half of the week is dedicated to sticking to a healthy routine so we can indulge the second half of the week. We are headed South so you better believe we will be eating WELL. 

We only have three dinners at home this week and I’m sticking to family favorites – taco bowls, lemon pepper salmon and chicken pesto ravioli for Cooking with Liz on IG LIVE this Wednesday at 7pm CST. When I’m focused on clean eating I try to go heavy on leafy greens and low on my carb/dairy/sugar intake. When it comes to my workouts, I usually try to run at least 15 miles a week (adding more cardio into my routine has been a big game changer for my weight loss journey). The days that I do longer runs/training sessions – I don’t stress as much about what I eat although I am still conscious not to over consume. I was talking to my trainer this morning and he reminded me that the days I don’t workout, I should be very conscious of what I’m consuming (specifically keeping my meals low carb). Just a good reminder! Mindset is everything when you’re trying to be healthy (er).
