Asian Chicken Salad Recipe

A few months ago I had an impromptu wine and chat with three of my friends. The plan was to just hang for an hour, have a glass of wine and sit by my girlfriend’s pool. Well two hours later we were so comfortable and my girlfriend who was hosting (hi Gabby!) went into her kitchen and pulled out the most incredible asian chicken salads ever. I was in awe of her ability to quickly throw this together and have recreated this multiple times since our night together. It is so simple, so fresh and light, packed with flavor and truly so easy. I am someone who gets really repetitive with her salads and this is a welcome addition for anyone who appreciates a good salad recipe.

Easy Asian Chicken Salad Recipe

Ingredients: (eyeball depending on your portions)
Napa cabbage, chopped
Bell peppers, chopped
Shredded carrots
Edamame beans
Green onions, sliced
Cilantro, chopped
Avocado
Ramen noodles (plain)
Black sesame seeds (optional, just to garnish)
Shredded chicken breast (I usually do about 1 breast per person)
1 lime
Sesame or ginger dressing (store bought, I love this one)

Chop all your vegetables and set aside. To make the dressing, I like to use a store bought sesame dressing (Trader Joe’s has a great one or I buy this one at Whole Foods) and add the juice of one lime to thin it out. Mix and set aside.

In a small sauté pan, add a little butter and toast your ramen noodles until they are lightly browned and set aside. In that same pan, add a little more butter and add your cooked chicken (you could also use rotisserie chicken!), ideally shredded. Roast it up in the pan until slightly browned. This just adds a yummy texture to your chicken!

In a bowl, add your chopped veggies. Top with chicken, ramen, dressing, a dash of black sesame seeds and a squeeze of fresh lime. Enjoy!! Oh my gosh I’m drooling just thinking about this.
