I am a poser when it comes to recipes and this one is no exception! I have been making these easy and healthy two ingredient pancakes for Charlie (and myself) for breakfast. Charlie will down 3 or so in just a few minutes and he enjoys them as is just as much as with syrup. I add a few dashes of cinnamon for an extra kick/sweetness but otherwise all you need are two ingredients for these easy and healthy pancakes. Here’s what to do…

Two Ingredient Banana Pancakes
(yields 6 small pancakes)

  • 1 banana (completely smashed into a chunky liquid consistency)
  • 1 egg
  • cooking spray (I use coconut oil)
    *optional toppings: butter, fresh fruit, cacao nibs, syrup, cinnamon, nuts

In a small bowl, smash up the banana so it is a chunky liquid consistency. I find this is easiest with pretty ripe bananas and using a fork tends to work best. Add 1 egg and mix well. Your “batter” should be a pancake batter consistency with chunks of banana here and there. Heat a large skillet over medium heat and coat with cooking spray. For each pancake, use a tablespoon to measure even pancakes (mine are usually 3 inches) – wait until they start to bubble (about 30-45 seconds) and flip. Since the batter is really soft, I find that it is really important to use a thin, clean (wipe it off with a paper towel) spatula for every pancake. Top with you favorite toppings and serve! 

These are seriously so easy and yummy. The perfect healthy breakfast for kiddos and adults. The soft consistency is great for toddlers (or babies who are still waiting on their teeth) and I love that you get a serving of protein, too!
