Crockpot Creamy Chicken and Rice

I’m constantly searching for cozy fall crockpot recipes that are easy to throw together for busy weeknights. I could recreate the flavors of a classic chicken soup a million different ways (like this skinny chicken pot pie recipe that is one of my most popular posts to ever!). Think of this recipe as a combination of pot pie, white chicken chili (add chili powder + cumin if you want more of this flavor) and chicken and rice. All the flavors and smells that you love this time of year with a little extra kid friendly energy thanks to some colby jack cheese and creamy greek yogurt. It’s a no brainer for busy nights and comes together quickly! And as most of my recipes go, add or omit whatever you like. My kids don’t like mushrooms so I made sure there weren’t any in their bowls. This recipe would also be delish with some green chilis, potatoes and white beans!

Crockpot Creamy Chicken and Rice Recipe

Ingredients:

  • 2 large carrots, chopped
  • 2 celery stalks, chopped
  • 1/2 white onion, chopped
  • 1/2 cup frozen peas
  • 1/2 cup baby bella mushrooms, quartered (optional)
  • 2 boneless, skinless chicken breast
  • 2-2.5 cups low sodium chicken broth (start with 2 cups, can always add more liquid if you desire)
  • 1 cup plain greek yogurt
  • 1/2 cup shredded Colby jack cheese (and more for topping)
  • 1.5 cups brown rice, pre-cooked (I like to buy it frozen and microwave!)
  • salt + pepper
  • red chili flakes (optional)

Set your crockpot to high. Add your carrots, celery, onion, chicken and generously season with salt and pepper. Add your chicken stock and mix everything together. Cook on high for 3.5 hours. Remove chicken, shred and return to crockpot. Add your greek yogurt and Colby jack cheese and stir to combine. Add your frozen peas and mushrooms (optional) and let cook another 10 mins. Add in your pre-cooked rice right before serving. Mix to incorporate (or you can easily serve this on top of rice in a bowl. I usually like to taste and add more salt if needed! Serve with cheese on top!

*note, in these photos I accidentally used 1 cup more stock than I meant to so our dinner was a little more soup-y than I prefer. You really just want the stock to barely cover your chicken breast in the crockpot.
