
This recipe for cauliflower gnocchi (we buy it in the frozen section at Trader Joe’s) with high protein tomato sauce, chicken sausage and peppers is a weeknight favorite in my house. I also love that this tomato sauce can literally go on any meal and be delicious. You don’t need to use gnocchi, use any pasta you want! I love a recipe that you can truly make your own and this one has seen so many iterations.

The trick to making this regular jar of tomato sauce taste like a tangy vodka sauce is cottage cheese! What can’t you add cottage cheese to, really? It makes for the most creamy and delicious sauce that your kids (and you!) will love.

Gnocchi with Chicken Sausage, Peppers and Protein Packed Tomato Sauce
Ingredients:
2 cups store bought tomato sauce (we love Rao’s!)
1/2 cup cottage cheese (we love Good Culture!)
1 bag of Trader Joe’s Cauliflower Gnocchi (but use whatever pasta or gnocchi you prefer)
2-3 chicken sausage links (I usually do one per person)
4 mini peppers or one large bell pepper, sliced thin
Fresh basil to top (optional)
Blend 2 cups of tomato sauce with 1/2 cup cottage cheese using an immersion blender. Cook your gnocchi as the package advices! I spray with olive oil and cook in the air fryer at 400F for 12-14mins.
Brown up your chicken sausage (I cut up 2-3 links) and peppers. I also add some chopped garlic for the last few minutes so it doesn’t burn! Add your gnocchi to the pan once done and top with your pasta sauce and warm through. Serve with fresh basil and a pinch of grated parm. Enjoy!
