
I’m on a mission to eat more fiber and this easy chia seed recipe is so yummy. Chia seeds aren’t my favorite texture but when my soon to be sister-in-law whipped this up my feelings changed! A great source of fiber and protein. I love that you can make this ahead of time and store for the entire week. I treat it sort of like a parfait and top with granola, fresh berries and sometimes a scoop of nut butter. Think of it as an elevated yogurt. Here is how to make this easy chia seed pudding…

Easy Chia Seed Pudding Recipe
Ingredients:
1 cup of chia seeds
1 cup of greek yogurt (I like Siggi’s vanilla)
2 cups of unsweetened almond milk, start with 1 and move to 2.
2 tbsp honey
1 tsp cinnamon (optional)
Combine all ingredients in a bowl. I usually start with one cup of almond milk and see how it thickens and then add about a half a cup more. Transfer your pudding to single serving cups or a sealable bowl (I use and love these or these). I like to top with an additional splash of almond milk and a dash of cinnamon.
