I love a pumpkin recipe for fall that isn’t TOO pumpkin-y, you know? These mini pumpkin pancake bites are such a fun breakfast option to have on hand! I jazzed them up with cinnamon and maple syrup to really embrace the flavors of fall. A great option when you’re hosting this holiday season and the perfect little bite that everyone will love. I used the Trader Joe’s gluten free pumpkin pancake mix and even added some protein with the help of unsweetened vanilla greek yogurt. I used this mini muffin tin to make them the perfect bite.

Mini Pumpkin Pancake Bites

Ingredients:

2 cups of Trader Joe’s Gluten Free Pumpkin Pancake Mix
2 eggs
1 cup of unsweetened vanilla greek yogurt
1 tsp cinnamon
4 tbsp melted unsalted butter
1/4 cup water
2 tbsp maple syrup
*you may have to add a little more water to thin out the batter!

Preheat your oven to 350F. Spray your muffin tin with non-stick baking spray. Spoon batter into tray and bake for 8 minutes. Let cool and store in the freezer! To reheat, microwave on each side for 10 seconds. Serve with maple syrup or eat alone! Enjoy!
