Today I’m sharing my go-to recipe for healthy chicken tacos! I love this recipe because you can throw it in the slow cooker in the morning and leave it until you’re home and ready to eat. The chicken only gets better the longer it cooks so don’t worry about time (I even throw this in 3 hours before dinner and it is delicious).
Slow Cooker Healthy Chicken Tacos
Servings: 2
Ingredients:
- 2 boneless/skinless chicken breasts
- 1 jar of your favorite salsa
- 1 can of diced green chili peppers
- 1 tbsp chili powder
- 1/2 tbsp cumin
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1 tsp salt
Put chicken breasts in a slow cooker on low for 6-8 hours or high for 3-4 hours. Pour in jar of salsa and diced green chilies. Add all of the seasonings. Mix around so the chicken breasts are evenly coated and there is enough liquid surrounding the chicken. Put the lid on the slow cooker and let cook for 2 hours without lifting the lid! Half way through your cooking time, shred the chicken using two forks (usually typical chicken taco consistency).
If you are ready to serve soon after you shred the chicken, move the slow cooker to low/warm. We like to use lettuce leaves for a low carb option and add your favorite taco toppings. We love cilantro, avocado, peppers, and onions. Enjoy!
