Creamy Herby Pasta with Peas and Sausage

The way my heart loves mixing up a sauce and throwing it on a pasta. It’s my favorite way to be creative at the end of the day and sort of lets my brain be free! It also helps that my three boys will always eat a pasta if I make it. Especially when sausage is involved! I love how sneakily packed with protein this sauce is thanks to the creamy cottage cheese. Almost like an alfredo sauce but not as rich and overflowing with herby, bright flavors that will make you feel good.

Creamy Herby Pasta with Peas and Sausage

Ingredients:
1lb pasta of your choice
1 cup cottage cheese
1/4 cup-ish parsley
1/4 cup-ish basil
1/4 cup-ish dill
2 garlic cloves
1/4 cup olives
juice of 1/2 lemon + a bit of rind
salt + pepper
extra virgin olive oil
3-4 chicken sausage links, removed from casings
1/4-1/2 cup frozen peas
pinch of red pepper flakes (optional)

In a food processor, add your cottage cheese, herbs, garlic cloves, olives, lemon, salt and pepper and olive oil. Blend until smooth and add more olive oil if the consistency needs thinning. Set aside and try not to eat the entire thing! Boil your pasta water and start browning your chicken sausage. Add your pasta to the water and reserve 1/4 cup of pasta water. Once chicken sausage is cooked, add a cup of the cottage cheese mixture straight to your sausage. Add the pasta water to thin out your sauce. Add frozen peas. Add your pasta and combine! Top with fresh basil, parmesan cheese and a drizzle of olive oil. Serve and enjoy!
