
Let’s be honest, there is no good way to photograph meatloaf to make it look appealing. Especially when you don’t use a loaf pan and instead plop it on a pan with some parchment paper. Regardless, we all know meatloaf is delicious and this recipe is the best! I’m constantly looking for new ways to get my boys to eat protein. We love ground beef (tacos, burgers, beef bowls) and meatloaf is a fan favorite in our home. This recipe is cozy and great for fall! Dave makes a delicious topping that caramelizes when you cook it the last 15 minutes. It’s a must try!

Homemade Meatloaf Recipe
Ingredients:
1 lb ground beef (I like 85% lean)
1 white onion, chopped
2 cloves of garlic, finely chopped
1/2 cup bread crumbs
1 tsp worcestershire sauce
1 egg
1 tbsp chopped parsley
1/2 tsp smoked paprika
generous pinch of salt
generous pinch of black pepper
1/2 cup ketchup
1/4 cup brown sugar
1 tsp dried mustard
Preheat oven to 375F. Saute your onion and garlic in olive oil. Add beef, onions + garlic, bread crumbs, egg, parsley, worcestershire sauce, paprika, salt and pepper to a bowl and combine. Place in a loaf pan or you can form on a parchment paper lined baking sheet (like me). Bake for 35 mins. Meanwhile, combine your ketchup, brown sugar and mustard in a dish. Remove your meatloaf and coat the top with your ketchup mixture. Bake for an additional 15 mins so it caramelizes the top a bit. Enjoy!!!
